Although you rarely see Pimm’s in the U.S., it’s a fantastic gin-based liqueur that can be used to create refreshing and light cocktails. Here’s a classic preparation that you can easily mix-and-match with different fruit and herb garnishes.

2 oz. Pimm’s No. 1
6 oz. Sparkling Lemonade or Ginger Ale
2 sprigs Fresh Mint
¼ cup Fresh Raspberries

In a collins glass, muddle the mint and raspberries, add Pimm’s and a handfull of ice. Top with the sparkling lemonade or ginger ale. Serve and enjoy!
