Worth Waiting

Eight years ago, Stephanie & Brent Gilewicz started making yogurt for themselves.

She came from restaurant management; he had spent decades behind the line at fine dining hotels and restaurants across Las Vegas, Los Angeles and Dallas. What began as a kitchen experiment became a farmers market staple. When customers started lining up in 90-degree August heat, the couple knew they had something. The name says everything about the method. Milk & Patience introduces cultures in small amounts, forcing slow bacterial growth that produces a tang and creaminess most plant-based yogurts never achieve. They make their own coconut milk from scratch, using a specific fat content and organic oil that gives the base its natural sweetness and floral depth. The flavors range from approachable to adventurous: plain, vanilla, mango, strawberry, blueberry, and yuzu. Available online and in Sprouts Farmers Markets nationwide; MilkAndPatience.com.
